GINGER INTRODUCTION

Ginger (known as ‘Ginger’ in English) is a type of plant used as a spice or for medicinal purposes, primarily distributed in tropical and subtropical regions, from East Asia to Southeast Asia and South Asia. The Zingiber genus, Boehmer, consists of about 45 species in Asia, with Vietnam hosting 11 species. Among them, Zingiber officinale is the most common and widely cultivated, including three varieties: Fingerroot, rhizome ginger, and hybrid ginger. Particularly, the Fingerroot variety carries a more distinctively warm and spicy taste compared to the other two types, often chosen as the optimal source of raw material.

The composition of ginger rhizome includes: Water, starch, cellulose, fats, essential oils (comprising zingiberene, sesquiphellandrene, and beta-bisabolene), and pungent compounds (consisting of gingerols and shogaols, with a significant portion being 6-gingerol).

USES AND APPLICATIONS OF GINGER

With valuable active ingredients, especially its essential oil known for anti-inflammatory, antioxidant, pain-relieving, mood-enhancing properties, etc., ginger is a high-value raw material used in food products (for flavoring, seasoning, etc.), pharmaceuticals (for treating coughs, calming nerves, etc.), and cosmetics (for slimming treatments, shampoos, conditioners, body washes, etc.). Moreover, the ginger scent is considered a familiar fragrance and widely used in consumer products.

Ginger Flavor

Synthetic or natural flavorings, available in liquid or powdered form, soluble in water or oil. Widely applied across the food industry (spices, sauces, teas, coffees, confectionery, beverages…), pharmaceuticals (pills or liquids), cosmetics (room sprays, cleansers, body washes, shampoos, lotions…), and animal feed. Creating the distinctive aroma and taste of ginger, with various scent tones tailored to meet specific product requirements.

Ginger essential oil

The high-value product is manufactured using the steam distillation method, yielding natural essential oil with high purity. Ginger essential oil is utilized across pharmaceutical, food, and cosmetic industries to impart flavor and provide high-value active ingredients. The oil ranges from light yellow to deep yellow, with a consistent liquid form and the distinctive scent of ginger. Typically, ginger essential oil is used in food at concentrations of < 1%, in pharmaceuticals and cosmetics at < 10%. The usage concentration varies depending on the intended application.
